About Bramble

Bramble is quite simply a manifestation of how our family likes to eat: no set form, no shopping, just great food as nature provides us.

Bramble is chef Randy Rucker’s highly anticipated return to a restaurant of his own after his Beard Foundation nominated Bootsie’s. Rucker expresses his philosophy—that food should represent an unrepeatable time and place—in the ingredients that inspire Bramble’s menus.

Our menus are executed with a deep love of Third Coast produce and cuisine, balancing Southern classics with modern techniques.

You can expect a fun, relaxing, and downright enjoyable atmosphere. The design and renovation reflect the restaurant’s roots—right down to the raw materials salvaged from each of the partner’s farms, barns, ranches, and a plantation.

Our Food

Our daily-changing menu is inspired by our surroundings and what speaks to the chefs as they forage their ingredients each day.

You can expect small and large dishes including whole fish and primals for 2+ diners.

The open kitchen is based around live fire, and the patios is a potage, or chef’s garden, where each chef tends his own section and harvests it daily to lay out for envisioning the menu.

Bramble also has its own vinegar and pickling program, as well as constant curing, aging, and charcuterie processes that meld traditional techniques with modern advancements.
